Basic Info
Sausage and Potatoes or Veggies for dinner!
From: Yust Cookbook
Yield: 2 full meals
Prep time: 10 minutes
Cook time: 30 minutes
Ingredients
- 1 Smoked Sausage (plain or andouille or other flavor)
- 2 Tbsp Oil (canola, olive, etc.)
- Vegetables like broccoli, potatoes, cauliflower, etc.
- Seasoning (I like Kinders Garlic & Herb)
Instructions
- Preheat oven to 400 degrees.
- Slice sausage into 1/2 inch slices.
- If using potatoes, cut into 1 inch or less cubes. You can also use frozen diced potatoes.
- If using other veggies, just cut into bite-size pieces. Nothing fancy, anything will work.
- Add sausage and potatoes/veggies to a bowl and toss with oil. You want to get it as incorporated as possible. Use more or less oil as needed.
- Put aluminum foil on a sheet pan and spread sausage and veggie mixture in as even a layer as possible.
- Liberally season everything on the pan. I like alot of seasoning - you do you.
- Put the pan in the oven for 30 mins to 45 mins. You want the potatoes soft (you can easily prick them with a fork or knife), and the sausage browned a bit.
- Take out and enjoy! If you do not include potatoes, add rice after baking to make it a meal!
Tips
Canola, Olive or Avocado Oils are best for this.
Use any seasoning that you like.
The aluminum foil helps with easy clean-up after baking, but is not required.
I like to use sausage and brocolli or zucchini, or cauliflower. If you use potatoes, make sure they are cut fairly small so they cook well in oven.
