Instructions

  1. Cut Pork loin into 3-4 pieces. You can trim some of the fat if you want to, but the fat will melt during cooking and adds flavor, so don't trim too much.
  2. Season the pork with the rub mixture. I use Kroger "Pork Rub", you can use whatever pork spice rub sounds good to you. Make sure each piece of pork is covered in the rub. Set the meat aside. You can store this in fridge for up to 12 hours before continuing if needed.
  3. In a medium bowl whisk together the apple cider vinegar, ONE CUP of the barbecue sauce, and ONE CUP of the broth.
  4. Turn your instant pot to the saute setting. Add the oil and allow it to get hot.
  5. Add half of the cubed pork to the hot oil and saute for 5 minutes, turning to brown on all sides. Remove the browned pork to a plate and repeat with the remaining half of the cubed pork.
  6. Turn the instant pot off.  Use the remaining 1/4 cup of beef broth and a wooden spoon to deglaze (scrape the brown bits) from the bottom of the pot. Make sure there are no bits stuck to the Instant Pot or you will get a "burn warning" when you try to cook it.
  7. Add all of the meat along with the barbecue sauce mixture to the instant pot.
  8. Close the lid and set to sealing.
  9. Cook on manual high pressure for 45 minutes. Once the cooking time is up, allow the pressure to release naturally (leave it alone) for 10 minutes, then do a quick release (switch the knob to venting).
  10. Remove the meat from the instant pot and shred.  You can drain some of the liquid if desired. Stir in the remaining cup of bbq sauce and serve.

Tips

Use a Pork Loin NOT a tenderloin. Pork Loin is cheaper and better for this recipe!

I use Kroger "Pork Rub" mix. You can find it in the spice aisle. To coat the meat, I put some of this package in a big bowl or plate, then press each side of the meat into the mixture until all sides are coated. You can "marinate" this meat for a few hours in the fridge for better flavor. If I'm doing this, I will typically put the meat cubes in a big ziploc or just a big bowl with plastic wrap over it.
