Instructions

Add honey to warm water, then sprinkle yeast over the top. Allow to proof for 5 minutes.

Add one cup of flour and incorporate well.

Add salt, oil, and eggs/yolks, then more flour. When dough no longer sticks to spoon, turn out and knead in rest of dough.

Knead dough for 8 minutes - until smooth and elastic and no longer sticky.

Put in an oiled bowl, cover and let rise for 40 minutes or until doubled in size.

Turn onto floured surface and knead briefly to get air out. Divide into three pieces and roll each into long snake about 1 1/2 inches in diameter. Braid from middle and pinch ends together, tucking them under sides of braid.

Grease a baking tray and place finished braid on pan. Cover with towel and let rise about 30 mins to an hour.

Preheat oven to 375 degrees F

Beat the remaining egg (and optionally 1 tbsp of honey) and brush a generous amount over each braid. Sprinkle with poppy seeds if desired.

Bake at 375 degrees F for about 30 minutes - covering with foil after 20 minutes. Bread should have a nice hollow sound when thumped on the bottom. Cool on a rack for at least one hour before slicing.
